We’re not sure which disappeared more quickly, the delicious samples or copies of the recipe, but in case you missed her at the market — or if you arrived too late to snag a copy of the recipe — here’s how to make your own:
Massaged Kale Salad with Fresh Strawberries
(great for breakfast, lunch & dinner)
Prep Time: 15 minutes
Yield: 6 servings
1 bunch kale
1 teaspoon sea salt
¼ cup diced red or green onion
¾ cup diced strawberries
¼ cup olive oil
2 tablespoons unfiltered apple cider vinegar
De-stem kale by pulling leaves away from stems. Wash leaves. Spin or pat dry. Stack leaves, roll up, and cut into thick strips. Put kale into a large mixing bowl, add salt, and massage kale with your hands for about 2 minutes. Stir onions & strawberries into kale. Dress with oil and vinegar and mix.
Use your Massaged Kale Salad in a variety of ways!
This salad keeps fresh for a week so incorporate this delicious summer dish into your everyday meals – add it as a salad or side dish to any lunch OR toast a slice of bread and spread a soft cheese (such as ricotta or goat cheese) then top with the massaged kale salad. You can even top the open-faced sandwich with an egg any style (over easy, hard boiled, etc.) for a bit more protein.
